You didn't say "new water pump" and a failed water pump would produce this problem as described. If the water pump checks out,I'd be looking for an obstruction somewhere in the cooling system (the thermostat and the radiator wouldn't be off my check-up list,even though they're 'new').
I've had several polys and none of them even came CLOSE to overheating. I drove a '61 Fury Poly in Albuquerque,it was 108ºF AND I was in rush hour traffic and the temp gauge was STILL only slightly above the middle of the range. I was overheating but the car wasn't!
