It's hard to call how much you'll pay. There is a magazine dedicated to tracking car auction prices. I forget the name of the publication, but I see it regularly in Barnes & Noble. It may cost more to buy a car in better condition, but it will probably be cheaper in the long run. I bought a "cheap" '58 Plymouth that needed a lot of work. I'm into it for close to a grand now and it is still not on the road. You must accept that you will probably never get back what you spend on a restoration.
